What Are Microgreens?


Microgreens are young, edible plants harvested at an early stage of growth, typically 7 to 30 days after germination. They are loaded with nutrients, packed with flavor – from peppery to sweet, making them a sought-after ingredient in many dishes served at AYANA’s restaurants.


Nutrient-Rich Superstars


Don’t let their size fool you! Microgreens are loaded with vitamins, minerals, and antioxidants. Studies suggest that some microgreens can be up to 40 times more nutrient-dense than their mature counterparts. Whether you’re looking to boost your iron intake or up your vitamin C game, a handful of microgreens can make a significant impact on your health and wellness.


Sustainable and Chemical-Free


At AYANA Farm, we’re passionate about sustainable farming practices. We proudly cultivate these little greens in our plant nursery grown using natural methods, ensuring our microgreens are not only delicious but environmentally friendly. We focus on growing radish, beetroot, amaranth, cabbage, mustard greens, celery and basil, each bringing its unique flavors and textures to the table.


Our Growing Method


The seeds are carefully sown evenly in shallow trays of nutrient-rich, compost-based soil mix (using our own compost) to promote healthy growth. We gently water the trays to avoid disturbing the seeds, using a misting spray bottle to ensure the soil remains moist but not oversaturated. Our farm team monitors the microgreens daily, carefully checking for moisture levels and growth progress.


Once ready (1-4 weeks, depending on the variety), our microgreens are delivered straight to our restaurants. This farm-to-table approach not only guarantees freshness but also reduces our carbon footprint by minimizing transportation time. Our chefs love to incorporate these vibrant greens into their dishes, adding a burst of flavor, color, and nutrition.
