Dinner on the beach, centered on the day's catch from Labuan Bajo's fishermen. Grouper and Flores lobster go over the grill with an Indonesian bumbu rub, and every table faces the sunset. On select evenings, Flores dance and the sasando — a traditional string instrument from Rote — carry the night.
