Seven kitchens, each tied to a time and view

Mornings belong to RINCA, slow and sun-warmed. By evening, the coastline divides itself in smoke and theater with KISIK's grill glowing against the dark and HonZEN's teppanyaki catching every eye in the room. Eleven floors up and down at the water's edge, four bars hold the sky and the sea between them. And six private settings, smaller and quieter than the rest, hold the most exclusive table in Labuan Bajo.

Dining

Seven Venues, Seven Views at AYANA Komodo

Smoke, seafood, and sundown

KISIK serves the day's catch from the Flores Sea under familiar constellations. The Jimbaran-style menu starts sharp and ends slow: lobster, prawns, and reef fish charred over open-air coals, with Rujak Buah Waecicu on the side for zest. End with tiramisu, the menu's one Italian word. During peak season, the waves share the evening with traditional Sasando music, the oldest duet on the beach.

Four bars, 11 levels apart

Two bars at AYANA Komodo answer to the sky. UNIQUE holds the sunset with cocktails and curling shisha smoke, while Mesa Lobby Lounge pours tea slow, the islands close enough to feel like neighbours. The other two answer to the water. Naga Bar floats above it, and the Pool Bar makes no distinction between water and wine.

From sashimi to sizzle, with sake to match

HonZEN runs the full range of Japanese cooking: sushi and sashimi sliced to order, fresh from the Flores Sea, ramen and rice bowls for comfort-seekers, and teppanyaki for those who appreciate dinner and a show. A premium sake list rounds it out, poured with the same care as everything else on the plate.

Mornings start at RINCA

Wholesome favourites, juices blended for proper kick, and buttery pastries warm enough to scent the ocean air. Open all day for local delicacies, familiar dishes from South East Asia, and the occasional import, like a juicy Australian tenderloin that finds itself in good company among well-travelled guests.

A table for two, anywhere

A traditional wooden boat, timed to meet the sunset, is one of six private settings built for two. Others include a beach picnic on our private island, candlelight on our Yoga Deck, and a platform that floats above open water so you can sink into the person across from you. Each is arranged for privacy, the resort handling everything but the romance.
