AYANA participates in Bali Hotels Association’s Sustainable Food Festival with the Theme “Sustainable Cuisine for a Better Living”

(Bali, September 2021) AYANA Resort Bali is proud to partake in the Bali Hotels Association Sustainable Food Festival. The festival opens on 27 September 2021 to mark World Tourism Day, aligned with this year’s theme of “Tourism for Inclusive Growth”, and will end on World Food Day, 16 October 2021.

This festival allows participating members to showcase initiatives to shift to a more sustainable way of operating, implementing key elements such as; sourcing 100% ingredients from Indonesia, encouraging a minimum of 75% organically grown items, respecting fair trade principles, and ensuring all seafood produce to be certified sustainable and poultry to be free-range.

AYANA’s culinary team has been taking a conscious approach to sourcing your meal without compromising taste and experience, while creating a better environment. In support of this cause, the chefs have carefully curated a three-course menu priced at RP 350,000 net at Sami Sami Restaurant – a trattoria-style Italian outlet located on a bluff overlooking the Indian Ocean that boasts brilliant views any time of the day, and especially at sunset.

Appetizer and salad to choose from are; Tartare di Pesce – Singaraja barramundi fillet with lemon and garlic marinade, Kintamani orange vinaigrette and Bedugul red radish, or Fiori di Zucca – crunchy zucchini flowers stuffed with Bali ricotta and Scamorza cheese, served with organic tomato sauce harvested from AYANA farm.

Main course options are; Petto di Pollo Agli Agrumi – sous vide free-range chicken breast with citrus and local herb sauce, pumpkin purée, and AYANA farm’s long beans and confit carrots, or Dentice in Padella – pan-seared Jimbaran red snapper with tomato sauce served with AYANA farm’s green vegetables, micro greens and Bali spinach tuiles.

The dessert selection comprises; Wild Berries Panna Cotta served with strawberry gelato and local berry coulis, or Delizia al Limone, AYANA farm’s organic lemon cake. For a more casual dining experience during this festival, diners can opt for Sami Sami signature pizza selection, available at Rp 200,000 net inclusive of coconut water, while the a’la carte menu is still served as well.
